Yemista in Greek means stuffed. This is another classic veggie dish in Greece. Its ingredients are zucchini, peppers, tomatoes, eggplant, and potatoes if you like.

Add a mix of meat, rice, and veggies in the oven and cook them on low heat for 60 minutes. You can omit meat to make it a pure veggie dish.
